Instead of deleting an organization, you can archive it. This has the advantage that this organization is inactive, but you can still access the data and reactivate it if necessary. Select Settings under your organization in the menu bar. You can archive the organization under Archive organization.
Now no one can access the organization and process payments. You can reactivate the organization in your personal settings by clicking on the cogwheel and selecting Restore.
